Esther's Family Recipes

Esther cooked up some grand meals in her time, but the Sunday dinners after church around the long mahogany table in the dining room of the big house at 18 Rensselaer St. in Hoosick Falls, (where the bay window faced the spruce trees and lilacs in the side yard), were eagerly attended by the hungry church crowd and family members...but in wintertime it was restricted to those who could spin their way up the hilly street during heavy snowstorms!

 

Meat Loaf

1 lb. hamburg
1 beaten egg
1 med. onion chopped
1/2 green pepper (op.)
1 tablespoon K. soy sauce
1 teaspoon Accent or MSG
1-1/2 teaspoon salt to taste
1/2 cup spaghetti sauce or Ragu
1-1/2 slice bread
Cover with catsup and bake in 350° oven 1 hour


Macaroni Cheese and Tomatoes

1 level tablespoon oleo over crumbs 100

salt & pepper to taste
Four servings - (169 calories each serving)


Those Famous Dumplings


1 egg well beaten
1/2 cup sweet milk
1 teaspoon salt
1 heaping teaspoon baking powder
flour to roll



Molasses Drop Cookies


1/2 cup sugar
1/2 cup Crisco
1 egg
1/2 cup molasses
3 cups flour
1/2 cup sour milk
1/2 teaspoon nutmeg
cinnamon and ginger
Mix, drop by teaspoon fulls and bake 10 min.
375° oven
Makes 4 dozen small cookies

Grandma's Rolls or Bread

(Jean's version of Grandma Myrtle Church's family recipie)

2 cups milk
1/2 cup sugar
1 teaspoon salt
1 tablespoon butter

Rolls: Heat together - Bring to a boil, but do not boil. Let cool. 1 yeast cake dissolved in 1 cup lukewarm water. Stir in 7 cups flour. Use 1/2 cup to mold to put in bowl. Grease bowl. Cover until raised to top. Punch and roll out. Cut off in pieces. Shape into balls. Let raise again. Bake in 350° until done. Take out of oven; Brush with butter immediately.

Method for bread: Let yeast soak until milk is cool. Put milk in mixing bowl with dissolved yeast. Add flour gradually and mix until all flour is in. Knead on floured board until smooth. Put in greased bowl and cover with greased cover. Let rise until dough comes to top of bowl. Divide in half and shape. Put in greased bread tins, bake.


Salmon Croquettes


1-1/2 cup canned salmon
2 beaten eggs
8 crushed saltines
1 tablespoon grated or ground onion
salt & pepper
1/2 teaspoon
1/2 teaspoon "Accent"
Mix thoroughly, shape in flat cakes
Fry 'til golden brown in oleo
or vegetable shortening
(1 tablespoon oleo)
Serves 3 - Makes 6 croquettes
(279 calories each serving)



Best Bread Pudding


3-3/4 cups milk
2 cups coarse bread crumbs
3 eggs (slightly beaten)
1/2 cup raisins
1/2 teaspoon salt
1/2 cup sugar
Sprinkle top with nutmeg
Bake 45 minutes or until silver
Knife comes out clean in med. oven 350°

Aunt Harriet Willetts' Chili Sauce

(given to Aunt Harriet by Vivian White,
a very old recipe)

12 tomatoes (peeled and blended)
3 onions (ground)
3 green peppers (ground)
1-1/4 cups of sugar
1 tablespoon salt
3/4 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 cup vinegar
Cook 2 hours or more
Add some crushed red pepper to taste
Put in sterilized jars and seal
Makes about six pints,
half of original recipe

Soft Molasses Cookies

2 -1/4 cups flour
1 teaspoon ginger
1 teaspoon cinnamon
1/4 teaspoon salt
2 teaspoons baking soda
2 tablespoons hot water
1/2 cup shortening
1/2 cup sugar
1/2 cup molasses
1 egg
6 tablespoons cold water
Raisins and nuts optional

Baking Instructions:

1. Sift together first 4 ingredients} set aside
2. Dissolve soda in hot water} set aside
3. Mix together shortening, sugar, molasses and egg. Beat until creamy.
4. Add flour mixture and cold water alternately to creamed mixture, beating well after each addition.
5. Mix in soda, then raisins and nuts.
6. Drop by teaspoonsful onto greased cooky sheet. Bake at 350
° F. for 12 to 14 minutes. Watch carefully!
Note: I used just under 350° for 12 minutes. - Patty

 

Myra Church's Sugar Cookies

1 cup sugar
1/2 cup Crisco
1 egg
1 teaspoon soda
1 teaspoon cream of tartar
2 cups flour (approx.)
1/2 cup sweet milk
Flavoring

Make a soft dough; bake in a 400 degree oven 10 minutes
